Spicy Thai Peanut Slaw

Once again it was time to raid the fridge and use up a few things I didn’t want to go to waste.  What I came up with was this delightful salad that puts a Thai twist on the Asian Noodle Salad I fell in love with a couple years ago at a potluck.  It turned out to be one of those experiments that turned out deliciously!  You can add or remove to it but it’s super tasty just the way it is.  Enjoy!

In a saucepan on low heat combine the following ingredients, stir until smooth and the peanut butter is well blended.  Set aside and allow to cool in the fridge.

3/4 cup water

1/2 cup peanut butter (smooth or crunchy works!)

1 Tbsp Lemon Juice

1 Tbsp Sambal Oeleck (Chili Paste or Red Pepper Flake will work also)

1 clove minced Garlic

1 tsp dry ginger or 1 Tbsp fresh ground ginger

1 Tbsp soy sauce

1 tsp toasted sesame oil

2 Tbsp orange marmalade 

1 Tbsp sugar

Once your peanut sauce is cool, pour over the following ingredients.

34 oz pre-packaged Tri Color Slaw Mix (Green Cabbage, Red Cabbage & Carrot)

1/4 cup chopped orange flavored dried cranberries (got mine at Trader Joe’s)

1/4 cup slivered almonds

1 pkg dry crunched up Ramen Noodle (optional)
Other ingredient ideas include diced chicken breast, raisins instead of cranberries…even salad shrimp!  Don’t be afraid to make it your own because you never know what amazing dish it might turn into!
