Gingered Molasses Cookies

There is not a cookie I love more than soft, chewy, dark molasses cookies.  Well, except for this recipe which I’ve adapted to give a kick of sweet and spicy candied ginger.  You’ll thank me after trying this recipe …it’s THAT good!

1/3 cup dark molasses

1 egg

3/4 cup of softened butter

1 cup white sugar

2 tsp powdered ginger

1 tsp ground all spice

1/4 tsp salt

3-4 tablespoons of chopped candied ginger (I buy mine at Trader Joe’s)

2 & 1/4 cups flour

1 tsp baking soda

Combine the first 8 ingredients and mix well.  Add the flour and baking soda and mix until just combined.  Refrigerate for 30 minutes.  Preheat oven to 350 degrees.  Scoop and roll dough into ping pong sized round balls and roll in white sugar.  Place evenly spaced on cookie sheet and bake for 9-10 minutes.  Once you start to see the crackled surface the cookies are just about done.  Pull pan from the oven, allow 1-2 minute setting time prior to removing the cookies and allowing them to cool on the countertop.

Makes approximately 3 dozen


The cookies will still be quite tasty without the addition of this Candied Ginger BUT it truly is what sets this recipe apart.  Whether you like your cookies chewy or choose to add a few more minutes to the bake time for a crispier cookie…this recipe will not fail to please!
