As warm weather approaches I always get a hankering for potato salad. It reminds me of grilling out, picnics and summertime potlucks. Because I’m currently eating “The Keto Way”, potatoes are off limits. In order to stay within my diet guidelines I decided to put a Keto twist on the basic potato salad recipe.
I don’t have any calorie or carb counts for my Faux Potato Salad but you can bet the numbers are pretty low. Feel free to amp up the flavor with any low-carb additions you like!
Basic Faux Potato Salad
- 1 Head Cauliflower
- 3/4 cup Full Fat Mayonnaise
- 1 Tbsp Mustard
- 1/2 Onion
- 2 Stalks Celery
- 3 Eggs
- 3-4 Strips Crispy Bacon
- 1/2 tsp Stevia/Erythritol Sweetener (optional)
- Salt & Pepper to taste
Clean and prep cauliflower by cutting it into large florets. Steam the cauliflower just until you can insert a fork – very el dente, not mushy. Drain cauliflower and shock with cold water. Once cool, cut into bite sized pieces (1 inch in size). Boil eggs and start to assemble the remaining ingredients. Chop celery, onion and crumble the bacon. Mix the mayo, mustard and sweetener – add whatever seasonings you like. Peel, chop boiled eggs. Combine all ingredients and refrigerate until its time to eat!
There are probably a million other cauliflower salad recipes out there and to be honest – I never looked. I just went with the flavor profile I was craving and it was more than satisfying to both my husband and myself.
