Keto Journal: Friendly Shortbread Cookies

One of the things I have missed most while eating Keto are cookies. I’ve tried the chocolate avocado cookies and they were ok but still racked up an impressive 10 or so carbs per cookie.

After ordering some supplies online I set to work baking a recipe similar to one I found for Keto Friendly Shortbread Cookies made with Almond Flour. I chose to use a smaller volume recipe because I wanted to make sure they tasted good before I had 2 dozen cookies that may or may not taste like cardboard.

First things first, here are a couple of the ingredients I ordered off Amazon. I found the products much less expensive than if I would have bought them locally…IF I could have found them locally.

Nature’s Eats – Blanched Almond Flour
32 oz / 2 pound bag

Swerve – Confectioners Style Sweetener
12 oz bag

Here’s the recipe I used with a couple tweaks. I chose to make a half-sized batch and utilized Pink Himalayan Salt and Swerve Confectioners Sweetener.


  • 1 Cup Almond Flour
  • 3 Tbsp Swerve (Stevia/Erythritol Blend) Confectioners
  • 3 Tbsp Grass Fed Butter
  • 1 Pinch Pink Himalayan Salt
  • 1/2 tsp Pure Vanilla Extract

Preheat oven at 350 degrees. Combine the flour, sugar, salt and vanilla.

Add room temperature butter in small pieces, work only until the mixture resembles the texture of dry oatmeal.

Roll the mix up in plastic wrap to form a “roll”. Slice cookies approximately 1/3 of an inch thick.

Bake for approximately 15 minutes until cookies are golden brown. Cool on a rack and enjoy! Makes 12-13 cookies at just under 4 grams of carbs each.

At first I was hesitant to try one of these little delights, but delightful they were! The flavor was outstanding and the guilt was minimal. I did find the texture to be a bit course as compared to the standard shortbread but it didn’t make the cookie any less wonderful. In some respects, the texture just made it more fulfilling.

If textures bother you, perhaps you could find a finer grind almond flour. Overall, I was very pleased with this dessert option. Coupled with a small bowl of berries, two cookies can turn into a less-than-sinful way to satisfy that sweet tooth in under 10-15 grams of carbs!
